Aunt Helen's Garlic Remedy

1 head of garlic 1 whole lemon
1/3 cup of honey 1 cup of water

Clean the garlic and lemon and place in blender. Blend thoroughly. Add honey and water. Blend well. Put mixture into sealed container and store in refrigerator. Use within one month.

I take 1 to 2 tablespoons in my orange juice at night when I feel a cough or cold coming on.

Susan's Super Caesar Salad

3/4 cup olive oil 2 egg whites
1/2 cup cider vinegar 1/2 cup lemon juice
1-3 garlic cloves crushed 2 tspn dried mustard
1/2 cup grated parmesan cheese 1 tbsp anchovy paste
ground sea salt and pepper to taste

Mix all above using whisk or electric hand wand. Let dressing sit covered in fridge for an hour before mixing with lettuce. Wash two heads of Romaine lettuce, tear and place into large bowl. Just before serving, pour mixture over lettuce. Add croutons and another 1/2 cup of grated parmesan.


Aunt Debbie's Roasted Garlic

Cut off the top of the garlic and drizzle with olive oil. Wrap the head in tinfoil or use a garlic roaster. Bake at 400 degrees C for forty minutes (or until garlic is soft). Unwrap from tinfoil or remove from roaster and place individual cloves on crackers.

We have added Boursin cheese to the cracker as well as grilled salmon. For extra zip add a dash of hot sauce.

Peter's Salad

1/2 cup olive oil 1/4 cup vinegar
juice from 1/2 of small lime 2 teaspoons soy sauce
pinch of cayenne pepper 1 large garlic clove
salt and pepper to taste 3 tablespoons chopped fresh parsley
2 tablespoons minced red onion 3-4 tablespoons sugar (can substitute honey for sugar)

Blend in blender. Store mixture in jar and refrigerate. Use on lettuce salad with red peppers, snow peas, and slivered almonds.

Suan Tai

Bernie from China sent us this delicious tasting recipe.

The Chinese use many parts of the garlic plant in their cooking. Suan tai (garlic scape) is one of these parts that are used in a popular seasonal dish.

- chop scapes into various sized pieces.

- stir fry in oil (I substitute chicken/vegetable broth). You can add a little water to help steam them.

- when almost done remove from wok.

- to wok add sliced/minced meat (I use chicken) that has been marinated in ginger, soy sauce and salt.

- when meat is ready add suan tai (scapes). Cook a minute or two and serve it on a bed of rice and add mushrooms.

Serve with green tea on the side. Delicious!!!

Garlic scapes are available for a short time each summer. The exact time will depend on where in the world they are grown. Our scapes are avalilable from the end of June to mid-July.

Lentil Garlic Soup

1/2 cup lentil beans 1/2 cup chopped onion
1 medium carrot 3 celery sticks chopped
4 garlic cloves crushed 28 oz can diced tomatoes
2 or 3 bay leaves 1 tsp of each sea salt, pepper, dill and parsley
2 cups V8 juice 7 cups chicken stock

In a stock pot add oil (olive oil), onions, carrots and celery. Saute until almost tender. Add garlic, tomatoes, all spices, V8 juice and chicken stock. Add lentils at the end (after being boiled for about an hour to soften). Bring mixture to a boil, stir occasionally, reduce heat, simmer and enjoy.
